i am not an experienced road racer, well done to you guys doing the manx
just my 10p worth, avgas requires leaner jetting, my 93 runs 330L/320R mains and 60 PJ's and R5 needles with std heads and 1.7 timing
your bike will run on 400+ but in my experience,

as i recently did dyno work and started at 440/430, it was down on power and "poured" fuel out the back, i went through 3.5l in a few runs!!!
i now use approx 3-3.5l on a 20 minute track session. note the green line was where i started, we didnt take it as far as it would go, just quite the run as it was obviously way off.
i recommend a dyno session if you haven't done one, Kevin of Projex nr Birmingham will do air/fuel diagnostics if you take your own lamda (leaded fuels only, you can use his with unleaded)
you get a good indication of what your bike likes and do final adjustment on track
you guys know all that, just posting for the benefit of those who havent tried it.

Appreciate what you are saying and what works for you bike, but if you ran that set up on the TT course your bike would destroy itself by the time you got to Quarterbridge. The bike is flat out for so long that you need the bigger jets to cool the bike and to make it rider friendly due to the gearing you also have to pull. What head volumes are you running , are they leaded heads?
